Orange Sesame Chicken Bowl

Orange chicken??!?? YES PLEASE!! This is absolutely DIVINE!!

Panda Express WHO?? This is not only better then Panda Express- but it's CLEAN and WW friendly!!

RECIPE:

3 tablespoons fresh squeezed Orange Juice

1 tablespoon Sesame Oil

1 tablespoon Soy Sauce or Coconut Aminos

2 lbs Chicken Breast

7 ounces rice of choice (I used Sprouted Brown Rice from Thrive- https://www.jdoqocy.com/click-9256523-13925903

1 large Sweet Potato

1 large head of Broccoli


Sauce:

1/8 cup Honey

1/4 cup Soy Sauce or Coconut Aminos

1 cup fresh Orange Juice & 1 1/2 tablespoons Orange Zest

2 tablespoons Sesame Oil

1 tablespoon Tapioca Starch mixed with 1/2 cup of water (make a slurry)

2 cloves Garlic- minced

2 teaspoons grated Ginger or Ginger Paste


Preheat oven to 375. Line 2 small and 1 large (or 2 large) baking sheets with parchment paper and set aside.


In a small bowl, whisk together 3 tablespoons orange juice, 1 tablespoon sesame oil and 1 tablespoon soy sauce. Add to chicken and let marinate 30 or more minutes.


Cook rice per package directions and set aside.


In a medium sauce pan, add the sauce ingredients. Bring to a simmer over medium heat for about 5 minutes. Once thickened- reserve 1/2 cup for next weeks recipe!


On one baking sheet add diced potatoes and broccoli. Spray with nonstick cooking spray and add salt and pepper to taste. On the second sheet pan, add chicken and top with 1 tablespoon (per breast) with sauce. Bake until veggies and potatoes are roasted and chicken is cooked through- broccoli will cook fast so remove it when roasted.


Add rice to bowl and top with 1/5th of potatoes, broccoli and chicken. Divide sauce into 5 servings and add to bowl. Top with sesame seeds if desired. Enjoy!
