One Pan Pizza Chicken

1 pound chicken breast or tenderloin
Kosher salt and freshly ground black pepper, to taste
3 cloves garlic, minced
1 jar zero point marinara
1 cup light shredded mozzarella cheese
24 slices turkey pepperoni
1/4 cup basil leaves
Season chicken with salt and pepper, to taste. Heat a large skillet over medium heat and spray with nonstick cooking spray. Add chicken and cook, flipping once, until cooked through, about 4-5 minutes on each side; set aside. Add garlic to the skillet, and cook, stirring frequently, until fragrant, about 1-2 minutes. Stir in marinara. Bring to a boil; reduce heat to low and simmer, stirring occasionally, until sauce has thickened, about 15-20 minutes. Return chicken to the skillet. Top with basil, mozzarella and pepperoni. Serve immediately, garnished with basil, if desired.
