Mini Turkey Meatloaf
These portion controlled mini meatloaves are DELISH!!!
The salsa in these gives them a GREAT taste and texture- nice and juicy! Pair with some potatoes and a veg and you have a PERFECT dinner!!

1 pound 93% Ground Turkey
1 medium Onion- diced
1 cup Salsa
1/2 cup Rolled Oats
1 Egg- beaten
1 tablespoon Parsley
1 tablespoon Garlic Powder
2 teaspoons Dried Thyme
Salt & Pepper
Preheat oven to 375.
In a large bowl, combine onions, parsley, salsa, oats, garlic powder, thyme and ground turkey. Add salt & pepper to taste. Use your hands to mix together.
Spray a baking sheet with nonstick cooking spray. Using your hands, form five mini meatloaves and place on the baking sheet.
Bake for about 25 minutes or until cooked through. Pair with potatoes and veggies for a PERFECT meal!!
