Loaded Wedge Salad w/Skinny Blue Cheese Dressing
I LOVE wedge salads!! This one did not disappoint and it's clean eating and WW point friendly!!
Such a GREAT side dish oe even a crisp, fresh lunch! Absolutely DELISH!!

1 head of Iceberg Lettuce
2 hard boiled Eggs
6 strips Center Cut Bacon- cooked & crumbled
2 Green Onions - chopped
1 cup Cherry Tomatoes- cut in half
BLUE CHEESE DRESSING:
1/2 cup Plain Nonfat Greek Yogurt
1 teaspoon Apple Cider Vinegar
2 tablespoons Shallots- minced
1/8 teaspoon Pepper
1/2 teaspoon Salt
1 ounce crumbled Blue Cheese
In a small bowl, whisk together the dressing ingredients then cover and refrigerate while preparing the rest of the salad.
Remove the core from the lettuce. Rinse the inside with cold water and turn back upside down on a paper towel to drain. Once drained, cut into quarters.
Add the lettuce to a plate and add toppings. Drizzle over the blue cheese dressing.
