Instant Pot Healthy Chili

This chili is the BEST I've ever had!!! So full of flavor and VEGGIES!!

This chili is even husband approved! Make it on the stove top or crockpot if you don't have an instant pot!

RECIPE:


Salt and pepper

1 lb 93% Ground beef

1 Large onion, diced

1Bell pepper, diced

1 cup zucchini, diced

8oz Mushrooms, roughly chopped

5 Garlic cloves, minced

28 oz Tomato sauce

1 can (15oz) Fire-roasted tomatoes, diced

1 4 oz can Mild green chilies

2 cups Beef stock

2 Bay leaves

1 tbs Garlic powder, granulated

1/4 - 1/3 cup Chili powder

2 tbs Cumin


  1. In a large skillet sprayed with non-stick cooking spray, or in your slow cooker if it has a browning mode, heat over medium high heat. Brown the ground beef. Drain off the fat into a heat proof bowl, discard.

  2. Place the ground beef in your slow cooker along with all other ingredients and cook on HIGH for 4 hours on high, or LOW for 8 hours.

  3. Once finished, stir, breaking up any large pieces of ground beef and adjust the salt and pepper to your liking.

  4. Serve with slivered jalapeños, avocados, cilantro and green onions. Enjoy!
