Ham & Cheese Rotini

Comfort food is here! This pasta dish in mac-n-cheese meets ham and spinach!

We loved this dish! It's is creamy, cheesy and decedent you'd never think it was clean eating AND WW friendly..... but it IS! #cleaneating #WW #myww #weightwatchers

RECIPE:

2 8oz packages Fiber Gourmet Pasta - Rotini (to order: https://www.netrition.com/cgi/goto.cgi?aid=4549

1/4 cup Melt Butter

1/4 cup Organic All Purpose Flour

2 cups Almond Milk

2 cups Shredded Mozzarella Cheese (I used Trader Joe's Organic Mozzarella)

1/4 cup Parmesan Cheese

1 teaspoon Garlic Powder

1/2 teaspoon Pepper

3 cups fully cooked Ham cubes

1 package (10oz) frozen Spinach (or 2-3 cups fresh)


Prepare pasta according to package directions. Meanwhile, in a Dutch Oven or large stock pot, melt butter. Stir in flour until smooth, gradually add milk. Bring to boil- cook and stir for 2 minutes or until thickened. Reduce heat, add the cheese, garlic powder and pepper. Cook until the cheese is melted- stirring constantly.


Drain pasta and add to sauce. Stir in ham and spinach. Transfer to a greased 9x13 baking dish. Bake uncovered, at 375 for 20-25 minutes or until heated through.


*I halved the recipe and it made 6 servings. The full recipe makes 12 servings*
