Ground Turkey, Mushroom & Rice Soup

Simple and delicious soup perfect for the colder months! Packed with protein!

Anti inflammatory soups loaded with veggies, carbs and protein! Makes GREAT leftovers!

  • 1 pound 99% ground turkey

  • 7oz mushrooms, chopped roughly

  • 1 carrot, chopped

  • 1 zucchini, chopped

  • 1 tsp turmeric

  • 1 tsp dried mint

  • ½ tsp rosemary

  • 1 tsp black pepper

  • 2 tbsp fresh oregano, chopped

  • 2 big scallions (or a small onion), chopped

  • salt to taste

  • 1 cup cooked rice

  1. Chop the mushrooms and saute ground turkey with some salt, water and olive oil, covered with lid.

  2. Stir in the mushrooms and cook for about 2 minutes.

  3. Add the carrot, zucchini, turmeric, rosemary, mint, black pepper and onion. Add water to cover (about a cup) and cook for about 4-5 minutes. Have a taste and adjust for salt.

  4. Add in the cooked rice.

  5. In the last minutes add the fresh herbs and turn the heat off.

  6. Serve immediately and enjoy!
