Egg Roll in a Bowl

Such an amazing lunch or dinner!! Low carb and full of Asian flare!!!

Packed with veggie (2 cups per serving!!) and full of flavor!! Makes a great meal prep!

1 pound 99% ground turkey

1 tablespoon sesame oil

4 cups chopped or shredded cabbage

3 carrots peeled and chopped

1 large zucchini chopped

6 green onions chopped- separate the green parts

3 tablespoons soy sauce

1 tablespoon minced garlic

1 teaspoon ginger root or paste

4 egg (optional)- I did use the eggs

  1. In a large skillet or wok, cook turkey until browned and then remove from skillet and set aside.

  2. Add sesame oil to the same skillet and allow to get hot. Add in cabbage and cook until softened. Add water if needed so the cabbage doesn't stick.

  3. Add in chopped veggies, whites of onions, soy sauce, garlic and ginger. Allow to cook until veggies are soft.

  4. Push veggies to the side and crack in the eggs. Scramble and once cooked through, mix with the veggies.

  5. Add 1/4 of the turkey to a bowl. Top with 1/4 of the veggies and sprinkle the green parts of the onions on top and enjoy!
