Dirty Rice with Andouille Sausage

A classic cajun meal that's healthy and WW friendly!

RECIPE:

2 cups cooked Rice (I used Trader Joe's frozen Jasmine Rice)

4 Andouille Sausages (I used AmyLu)

1 tablespoon Oil

1 Onion- chopped

1 green Bell Pepper- chopped

2 stalks Celery- chopped

2 cloves Garlic- minced

1/4 cup fresh Parsley- chopped


Prepare rice and set aside.


In a large skillet, add oil and add onion, pepper, celery and garlic. Sauté until cooked through.


Add cooked rice to the sausage mixture and stir to combine. Top with parsley.
