Crock Pot Beef Stew

After a long day it's nice to come home to dinner ready to go! Not to mention comfort food!

This recipe is DELICIOUS!! True comfort food- hearty and WW friendly!!

1 tablespoon Oil

2 pound Chuck Roast- cut into bite size pieces

1/4 cup Flour

2 stalks Celery- chopped

3 large Carrots- peeled and chopped

1/2 cup froze Peas

5 Yukon Gold Potatoes- small- cut into bite size pieces

1 red Bell Pepper- seeded and diced

1 Onion- chopped

2 cloves Garlic- minced

2 teaspoons dried Thyme

1 tablespoon Parsley

2 tablespoons Tomato Paste

Salt & Pepper to taste

2 1/2 cups Beef Broth

1/2 cup Red Wine

Add beef to slow cooker and coat with flour. Add the remaining ingredients. Stir to mix.

Cook on low for 8 hours. If a thicker stew is desired, mix 1 tablespoon cornstarch in with 2 tablespoons water to create a slurry and add to stew. Stir and simmer until thickened.
