Copycat Panera Green Goddess Salad

This salad is incredible!!! Full of ALL good things and very filling!

All clean ingredients and WW friendly!! Great option for low carb as well~

Pickled Onions:

1 cup sliced Red Onion

1/2 cup White Vinegar

1 tablespoon Sugar Alternative

1 1/2 teaspoons Salt

1 cup warm Water


2 bags Salad Greens of your choice

3/4 pound Chicken Tenders or Chicken Breast

4 slices Center Cut Bacon

200g (50g per salad) Avocado

1 1/2 cups chopped Tomato

4 hard boiled Eggs

2 ounces (1/2 oz per salad) Feta Cheese

2 tablespoons Pickled Onions per salad

Green Goddess Dressing:

4 tablespoons (1 tbs per salad) Mayo

2 teaspoons Chives

2 teaspoons Parsley

1/2 teaspoo Poultry Seasoning

2 tablespoons Lemon Juice

1 tablespoon Balsamic Vinegar

1/2 teaspoon Salt

1/4 teaspoon Pepper

Pickled Onions- Slice onions a thin as possible. In a small bowl, combine vinegar, sugar, salt and warm water. Add onions and sugar. Mix until combined and let rest 30 minutes before serving.

Dressing- Mix all ingredients well. You can mix in a blender, food processor or with a hand mixer.

Salad- Add lettuce. Add toppings and drizzle over dressing! Enjoy!
