Copycat Panera Bread Mac & Cheese

RECIPE:

2 bags Fiber Gourmet Pasta (to order- https://www.netrition.com/cgi/goto.cgi?aid=4549

3 tablespoons Butter

2 tablespoons Flour

2 cups low-fat Milk

8 ounces Mozzarella Cheese

4 ounces light shredded Cheese

2 teaspoons Dijon Mustard


Prepare pasta per package instructions.


Make a basic white sauce by melting the butter, add the flour and cook over medium heat for about 1 minute. Slowly add in the cold milk, and stir until sauce is thickened.


Add the mozzarella cheese and stir. Add the light shredded cheese and stir. Lastly add the dijon mustard. Add in pasta and stir. Serve immediately.
