RECIPE:

1 pound 93/7 Ground Beef

1 tablespoon Avocado/Olive Oil

1 medium Onion - chopped

1 Bell Pepper - chopped

1/2 teaspoon Salt

1 tablespoon Chili Powder

1 teaspoon Dried Oregano

1 tablespoon Tomato Paste

1 14.5 ounce can Low Sodium Chicken Broth

1 14.5 ounce can Diced Tomatoes

1 15.5 ounce can of Kidney Beans - drained & rinsed

1 15.5 ounce can Pinto Beans

  • Heat the oil in a large pot over medium-high heat. Add the onion, pepper, garlic, salt, chili powder, and oregano. Cook for about three to five minutes or until the veggies are fragrant and beginning to soften.

  • Stir in the tomato paste and sauce; cook for another minute before adding the ground beef, breaking it up with a wooden spoon, and cook until the meat loses its raw color (about 5 minutes).

  • Add the broth and simmer for about 10 minutes. Stir in the tomatoes and the beans; bring to a boil. Cook, uncovered, stirring occasionally, until thick, about 10 minutes.

  • Ladle into your favorite bowl and top with your favorite chili toppings (ie. cheese, scallions, Greek yogurt, etc). Make sure you add points for any toppings! :)
