Chickpeas Kale Quinoa Buddha Bowl

Clean eating, delicious and hearty meal! Vegetarian or Vegan!!

RECIPE:

1 cup Quinoa (dry)

2 cups Water

1 can Chickpeas

1 tablespoon Avocado Oil

Salt, Pepper, Paprika, Thyme, DAKS Original Red (to order: https://daksspices.com/buy-daks code- jennswwjourney and Oregano (to taste)

1 cup Kale

1 cup Baby Spinach

1 Carrot

Parsley (to top bowl)


Avocado Dressing:

1 large Avocado

1 clove Garlic

2 tablespoons Full Fat Yogurt (plain)

2 tablespoons water- or more as needed

Pinch of Salt

Squeeze of Lemon


Prepare chickpeas- drain and rinse and pat dry with paper towel. Add oil and season with salt, pepper, paprika, thyme and oregano. Mix well and add to parchment lined baking sheet. Bake at 390 until crisp- about 25-30 minutes. Remove from pan and cool.


While the chickpeas are in the oven, cook quinoa per package instructions. Add salt and pepper and remove from stove and allow to cool.


Prepare the avocado dressing - blend all ingredients until smooth adding water as needed to thin out the dressing.


Wash and dry the kale, spinach and carrots. Chop carrot and cut spinach and kale into strips.


Assemble your bowl- place quinoa in the bottom. Top with carrot, kale, spinach and chickpeas. Add dressing and enjoy!!
