Chicken Salad with Grapes

OMG this is SO good!! Seriously delicious and VERY low in points & calories!

Super easy to make and is the perfect meal prep!! Serve with a wrap, toast or top your favorite salad greens!

RECIPE:

  • 1/2 pound cooked boneless skinless chicken breast- shredded

  • 1/2 cup red grapes, halved

  • 1/4 cup celery, chopped

  • 2 tbsp green onions, chopped

  • 1/4 cup nonfat Greek yogurt

  • 3 tbsp reduced fat mayonnaise

  • 2 tsp Dijon mustard (more to taste)

  • 1/2 tbsp lemon juice

  • 1/2 tsp onion powder

  • 1/2 tsp salt

  • 1/2 tsp pepper

Mix together the greek yogurt, mayonnaise, lemon juice, onion powder, salt, pepper, tarragon, and celery seeds.

Fold in the chicken, grapes, celery, and scallions.

Taste and season as needed. If possible, let rest in the fridge for an hour before serving for the flavors to meld.
