Chicken Meatball Casserole

This is DELISH!!! Hearty and filling and a GREAT lunch or dinner!!

RECIPE:

Nonstick Cooking Spray

1 pound 98% Ground Chicken

1/2 cup Canned Pumpkin

1/3 cup Grated Parmesan

1/4 cup diced Yellow Onion (or 1/8 cup Minced Onion)

2 tablespoons Parsley

1 teaspoon Salt

1/2 teaspoon Pepper

2 cloves Garlic-minced


CASSEROLE:

8 ounces Fiber Gourmet Pasta (to order: https://www.netrition.com/cgi/goto.cgi?aid=4549

24 ounces 0sp Marinara (recipe: https://theskinnyishdish.com/crockpot-marinara/

1 cup Shredded Mozzarella

1/4 cup Parmesan


Preheat oven to 350 degrees. Coat a baking sheet with nonstick cooking spray.


Mix the chicken, pumpkin, parmesan, onion, parsley, salt, pepper and garlic in a large bowl. Cover & refrigerate for 20 minutes.


Shape into meatballs & place on baking sheet. Bake for 12-15 minutes or until cooked through. Spray a 9x13 baking dish with nonstick cooking spray. Set aside.


In a medium pot, bring water to a boil and cook pasta per package instructions. Drain and rinse.


For the casserole: Toss the cooked pasta with the marinara sauce in a large bowl. Transfer to greased baking dish. Nestle the meatballs into the pasta. Top with mozzarella and parmesan.


Bake until the cheese is melted and bubbly, about 20 minutes. Let stand for 5 minutes then enjoy!!
