RECIPE:
1lb (450g) ground chicken - 98%
1 tablespoon chopped scallion
1 teaspoon chopped parsley
1/2 teaspoon salt (or crumbled bouillon cube)
1/4 teaspoon cayenne pepper, optional
1/2 teaspoon chili pepper flakes, optional
2 tablespoons fresh garlic, minced
1. To make the garlic herbs chicken patties: Combine all ingredients for the chicken patties (ground chicken, scallion, parsley, garlic, salt, cayenne, and chili flakes) in a medium-sized bowl and gently mix until everything is evenly combined. Do not overwork, so you’ll get a better texture.
2. Heat a skillet over medium-high heat and divide the chicken mixture into six equal parts. Flatten gently to form the chicken patties, then sear the chicken patties in the skillet for 5-8 minutes per side or until internal temperature reaches 160ºF (71ºC). Make sure to give a good sear to the chicken patties so they’re crispy on the outside and soft on the inside. Remove from the skillet and set aside. You can also bake them at 425.
Cucumbers:
3-6 cucumbers
3 cups vinegar
2 cups water
1/2 red onion- sliced
green onions- sliced
1 teaspoon minced garlic
2 teaspoons dill
Add everything to a bowl, cover and allow to pickle overnight.
