Buffalo Chicken Stuffed Sweet Potatoes

The perfect meal prep or quick or lunch or dinner!! The perfect pairing of spicy & sweet!

Fast, flavorful and a little zip from the buffalo sauce makes this a GREAT meal!!

RECIPE:

4 medium Sweet Potatoes

2 cups shredded Chicken

1 packet Ranch Seasoning

2 ounces Blue Cheese

Chives for garnish

3/4 cup Buffalo Sauce- I used Sweet Baby Rays


Heat oven to 450 degrees.


Poke the sweet potatoes with several holes and put on a microwave safe plate and cook for 5 minutes. Remove and wrap each potato with foil and put in to oven to bake for 10 minutes.


While the potatoes are baking, spray a skillet with nonstick cooking spray and add chicken. Season with salt & pepper. Cook, let cool then shred.


Add chicken to a medium bowl. Add buffalo sauce and ranch powder and stir to combine.


Add baked potato to a bowl, slice in half. Add chicken mixture, blue cheese & top with chives. Enjoy!
