Buffalo Chicken Meatballs

OMG I'm LOVING these!! The perfect pairing of buffalo sauce & blue cheese! YUM!!

RECIPE:

4 tablespoons Butter (I used Melt Plant Based Butter)

1/3 cup Buffalo Sauce (I used the New Primal- YUM!!!)

1/3 cup Blue Cheese Crumbles

Salt

1/3 cup Panko Breadcrumbs

2 stalks celery-finely chopped

2 cloves Garlic - minced

1 Egg

1/4 cup sliced Green Onions

1/2 teaspoon Onion Powder

1 pound Ground Chicken (I used 92%)


Preheat oven to 425. Cover sheet pan with parchment paper.


In a small saucepan, add butter, buffalo sauce and blue cheese crumbles. Heat until melted & combined. Add salt to taste.


In a medium bowl, stir together breadcrumbs, celery, garlic, egg, green onions and onion powder and season with salt. Add chicken and mix until fully combined.


Using a cookie scoop, scoops meatballs and add to baking sheet. Bake for 15 to 17 minutes or until golden brown.


Drizzle meatballs with sauce and ENJOY!!
