Breakfast Tacos

Add your favorite add on's and toppings to make the PERFECT breakfast tacos!

Use your favorite tortilla and make a protein packed, flavorful breakfast taco! Yum!

  • Bacon or Sausage of choice

  • 8 large Eggs

  • 3 Tablespoons low-fat Milk

  • 1 teaspoon Salt

  • 1 teaspoon Pepper

  • 2 Tablespoons light Butter

  • 1 1/2 cups Shredded Mexican Cheese (divided)

  • 8 small Flour Tortillas (warmed) (1 point each)

  • Avocado (cut into pieces and lightly salted)

  1. Cook bacon or sausage and set aside.

  2. In a bowl, beat together eggs, milk, salt, pepper, and 1 cup of cheese.

  3. Heat skillet over medium-low heat. Add butter and let it melt. Add egg mixture and cook until eggs and softly scrambled, stirring often. Taste and add more salt and pepper, if needed.

  4. Warm each tortilla to make them soft and pliable. Fill each tortilla with egg mixture and then top with bacon or sausage. Sprinkle with salsa, avocado, remaining cheese, cilantro, and white onion, if desired.
