RECIPE:
14.5 oz can Diced Tomatoes
6 6" Flour Tortillas (1sp each)
1 pound 93% Ground Beef
1 Bell Pepper- chopped
1 teaspoon Chili Powder
1/4 teaspoon Ground Cinnamon
4 ounces Shredded Light Cheese
Top with Cilantro
Preheat oven to 400. Spray a pie plate with nonstick cooking spray. Spread a layer of diced tomatoes in the bottom of the pie plate. Arrange four of the tortillas on top of the tomatoes and up the side of the plate- overlapping as well.
In a large skillet, cook ground beef, onion and pepper over medium heat until cooked through. Add chili powder and cinnamon, cook for 1 minute. Stir in half of the remaining tomatoes. Bring to a boil, reduce heat. Cook uncovered for 2 minutes. Spoon over tortillas in plate. Cut remining tortillas into strips. Layer cheese and tortillas over beef mixture. Top with remaining diced tomatoes.
Bake uncovered for 20-25 minutes or until tortillas are slightly browned. Let stand for 5 minutes. Cut into wedges to serve. Top with your favorite toppings and cilantro.
