BBQ Meatballs & Sweet Potato Mash
Easy Lunch meal prep packed with protein, complex carbs and veggies!

RECIPE:
Sweet Potato Mash
2 sweet potatoes medium; scrubbed
¼ teaspoon salt
1 tablespoon butter
BBQ Meatballs
1 lb lean ground beef - 96
1 egg
¼ cup breadcrumbs
1 teaspoon worcestershire sauce
½ teaspoon salt
½ cup barbecue sauce divided- no sugar added
12 oz green beans washed, ends trimmed if you prefer
Cook sweet potatoes- you can cook your sweet potatoes using your favorite method. To steam, add 2 cups of water to a pot, place a steamer basket on top, and place the sweet potatoes into the steamer basket. Cover and cook for 20-30 minutes, until the sweet potatoes are fork-tender.
Mash sweet potatoes- When cooked through, remove skins and mash the sweet potatoes with salt and butter.
Prepare BBQ meatballs- Heat oven to 350°F. In a large bowl, mix together the ground beef, egg, breadcrumbs, worcestershire sauce, salt and ¼ cup of the BBQ sauce
Bake- Roll into meatballs. Bake for 20 minutes, then brush tops with ¼ cup more BBQ sauce. Return to the oven for an additional 5 minutes.
Steam green beans- Steam in a covered dish in the microwave or on the stove top for 5 minutes or until tender crisp.
Portion- Divide the meatballs, mashed sweet potatoes and steamed green beans between four meal prep containers. Cool completely, then refrigerate.
