BBQ Chicken Meatloaf

Delicious, healthy, on an dinner! Clean, real food and protein packed!

A great spin on traditional meatloaf! The BBQ sauce makes it perfect!!

RECIPE:

1 pound 98% Ground Chicken

1/2 Onion- finely chopped

1/4 cup Cilantro or Parsley- chopped

1/3 cup Flour

1 1/2 tablespoons BBQ Sauce (I used G Hughes)

1 Egg

1/2 teaspoon Salt

1/3 teaspoon Pepper

2 teaspoons Oil


For the top:

1/4 cup BBQ Sauce

1/4 cup Green Onions- chopped


Preheat oven to 450 degrees. Add parchment paper to a small baking sheet.


Mix all ingredients in a medium bowl. Spray parchment paper with nonstick cooking spray. Form meat mixture into a loaf (7" x 4") or so.


Bake for 25-30 minutes or until cooked completely through. Once removed from the oven, brush the top with the BBQ sauce and add green onions. Serve and enjoy!
