Autumn Glow Salad

The healthiest, most nutrient packed meal!! And all Fall vibes!!!

RECIPE:

1 cup (uncooked) Quinoa, Bulger etc...

1 head Cauliflower

2 medium Sweet Potatoes

1 tablespoon Oil

1 large Apple

Dressing (optional):

1 bunch of Parsley- minced

1 clove Garlic- minced

2/3 cup Oil

Juice from 1 Lemon

1 teaspoon Agave

1/2 teaspoon Salt

Pepper to taste


Rinse your grains and cook per package instructions.


Preheat oven to 425 degrees. Chop the cauliflower and sweet potatoes and add to baking sheet. Drizzle over the oil and add seasonings. Mix together and roast for 20 minutes or until brown and crispy.


While veggies are cooking, chop apple. Prepare dressing if using.


Mix grain, veggies and apples together and add to bowl. Enjoy!
