Air Fried Potato Skins

3 medium Russet Potatoes
2 teaspoons oil
salt & pepper to taste
6 tablespoons of light shredded cheese (1 tbs per potato skin)
6 tablespoons of bacon bits (1 tbs per potato skin)
chives to taste
Wash potatoes. Add to air fryer basket and air fry at 400 until soft. *you can pre-cook them in the microwave to cut down on the air fry time*. Cut in half and scoop out most of the inside.
Drizzle 1 teaspoon of olive oil, add 1 tablespoon light cheese, 1 tablespoon bacon bits and sprinkle with chives. Air fry at 400 until crispy (mine took 10 minutes).
Add your favorite toppings like sour cream, guac and enjoy!
