RECIPE:
1 lb 96% ground chicken
1/3 cup panko breadcrumbs
1 large egg - lightly beaten
1 small carrot - finely grated
1 stick celery - minced
2 green onions - minced
3 cloves garlic - minced
1/2 tsp paprika
1/2 tsp kosher sea salt
1/4 tsp ground black pepper
1/3 cup buffalo sauce - I used Sweet Baby Rays
Preheat oven to 400 degrees. Line a standard size baking sheet with parchment paper or a baking mat, set aside.
In a large mixing bowl, combine the ground chicken, panko and egg. Add buffalo sauce. Allow the panko to soak in the egg for 5 minutes. Add the carrot, celery, green onion, garlic, paprika, salt and pepper. Using your hands (or a spatula), mix together just until combined (overworking it will cause the meatballs to be dense).
Using a spoon or a standard size cookie scoop, shape into meatballs and place onto the prepared baking sheet. Place in the oven and bake for about 15-20 minutes or until cooked throughout (internal temperature of 160).
Remove from the oven, place the meatballs in a bowl, add extra buffalo sauce if desired and gently toss to combine.
