Fudgy Brownies (2 points!!)

OMG these brownies are INCREDIBLE!! Only 2 points per brownie and 50 calories!

Ooey and gooey and one of the BEST brownies I've ever had and ONLY 2 points!!

RECIPE:

  • 3/4 cup all-purpose flour

  • 1/3 cup unsweetened cocoa powder, sifted

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 240 Lily's chocolate chips

  • 2 tablespoons light butter

  • 2 tablespoons nonfat Greek yogurt

  • 1 tablespoon butterscotch syrup (you can use any syrup)

  • 1 large egg

  • 1 large egg white

  • 2 teaspoons vanilla extract

  • (optional) sprinkling of powdered sugar on top

  1. Preheat the oven to 350 degrees F.

  2. Grease an 8 x 8 inch baking pan and set it aside.

  3. In a large bowl, whisk together the flour, sifted cocoa powder, baking powder, and salt. Set the dry ingredients aside.

  4. In a small bowl, melt the Lily's chocolate chips and butter together in the microwave, in 30 second increments, stirring in between sessions. Set aside the chocolate mixture and let it cool slightly.

  5. In a large bowl, whisk together the sugar, yogurt, chocolate syrup, egg, egg white, and vanilla extract.

  6. Stir in the chocolate mixture.

  7. Fold the dry ingredients into the wet ingredients in three batches with a spatula until just incorporated. Be careful not to over mix.

  8. Pour the batter into the prepared baking pan and bake it for about 20 minutes or until a tester inserted comes out clean.
