Chocolate Frosted Cupcakes

These cupcakes are FIRE!! SO incredibly moist and delicious! Did I mention healthy?

They are delicious with or without frosting! A Must make- kid and family approved!!

RECIPE:

3/4 cup sweet potato puree

2/3 cup Flour

1/3 cup protein powder

1/4 cup flax meal

1 tsp baking soda

1/4 cup cornstarch

5 dates

1/2 tsp salt

2/3 cup warm water

1/2 cup cocoa powder

1 tbs unsweetened applesauce

1 tsp vanilla extract


Frosting:

I used the zero sugar frosting from Pillsbury


Heat oven to 350 degrees and line a muffin pan.


Add flour, protein powder, flax, cornstarch, Lakanto, baking soda and salt to a large bowl.


Mash sweet potato's and add to food processor with pitted dates. Blend til pureed.


To a small bowl, add the cocoa powder and warm water and mix until dissolved. Add to sweet potato/date mixture and stir. Add to dry ingredients.


Add the applesauce and vanilla and stir just to combine, Do not over stir


Add mixture to muffin pan and bake for 16 mins or until a toothpick comes out clean.


Let cool completely and frost if desired.
