Taco Mac & Cheese Cup
Who doesn't LOVE Mac & Cheese AND Tacos?? Pair them together for an incredible meal!
Easy weeknight recipe and absolutely DELISH!! Husband approved & family friendly!

1 pound 96% Ground Beef
1/2 cup Salsa (I added 1 full cup)
8 ounces Fiber Gourmet Elbow Pasta (to order:https://www.netrition.com/cgi/goto.cgi?aid=4549
1 can (10.5 oz) Campbell's Cheddar Cheese Soup
1/2 cup Frozen Corn- thawed
1 1/2 cups Light Shredded Cheese
Preheat oven to 350. Either line or spray a muffing pan with nonstick cooking spray.
Cook ground beef in a skillet and drain any fat. Remove from heat.
Stir in the soup, salsa, corn, macaroni and about 3/4 cup cheese. Spoon equally into 12 muffin cups. Top equally with remaining cheese.
Bake for 15 minutes or until heated through and cheese is melted. Enjoy!
