Shrimp Stir Fry

OMG this was SO good!!!! Reminds me a lot of sweet & sour shrimp! YUM!

A cross between sweet & sour shrimp and stir fry! Really delish and LOW points!

RECIPE:


Sauce-

3 tablespoons Soy Sauce (or Coconut Aminos)

1 tablespoon Arrowroot Powder (or corn starch)

1 1/2 tablespoons Honey

1 clove Garlic

2 tablespoons Lemon Juice


Stir Fry-

2 tablespoons Sesame Oil

1 1/2 tablespoons Ginger

1 clove Garlic

1/2 cup Green Onions- chopped

1 pound Shrimp (preferably cooked)

1 bag Snow Peas- ends trimmed

Sesame Seeds


In a small bowl, whisk together the sauce ingredients and set aside.


In a large skillet, heat the sesame oil on medium high. Add the garlic and ginger and cook for 1 minute. Mix in the green onions and shrimp and cook for a couple more minutes. Add in the snow peas.


Pour in sauce, and mix occasionally until the sauce has thickened.


Remove from heat and sprinkle with sesame seeds. Serve over rice if desired.
