Samoa Cookie Bars

Girl Scout vibes!!! SO good! A healthier, lower point option of this famous cookie!

You won't believe how DELICIOUS these are!! Truly decadent!!

RECIPE:

1 cup Medjool Dates- pitted and halved

1/8 teaspoon Salt

1/3 cup Unsweetened Almond Milk

1/3 cup Maple Syrup

1/2 teaspoon Vanilla Extract

1/2 cu Unsweetened Coconut Flakes

2 servings (28g) Lily's Chocolate Chips


Crust:

1 1/2 cups Flour

1/4 teaspoon Salt

3 tablespoons Butter (I used Melt plant based butter)

2 tablespoons Maple Syrup


Preheat oven to 350 degrees. Grease an 8x8 baking dish.


In a large bowl, whisk together flour and salt. Add butter and syrup. Stir to combine and until dough forms and all the dry bits are incorporated. Press dough into prepared pan until flat. Bake for 12-14 minutes. Crust should start to brown on the edges. Remove from the oven and set aside.


While the crust is baking, pit and slice your dates and cover them in a small bowl with hot water. Allow to soak at least 5 minutes. Once soaked, drain and add to high power blender. Add salt, milk, maple syrup and vanilla extract. Blend until smooth.


Transfer the date caramel to a medium bowl. Add the coconut and stir to combine. Spread over the cooled crust. Refrigerate for at least 1 hour.


In a small microwavable bowl, add the chocolate chips and heat until melted. Drizzle over the set bars or spread on top for a layer of chocolate.


Refrigerate and additional 30 minutes. Cut and enjoy!
