Peanut Butter Crumble Yogurt Parfaits

These are INCREDIBLE!!! Full of protein and lots of cookie dough bits! YUM!

The perfect Breakfast (or dessert!) that's packed with sweetness and protein!!

RECIPE:

COOKIE DOUGH BITES (makes 4 servings)

  • 1/2 cup quick oats

  • 1/4 cup Kodiak protein flour

  • 1 scoop vanilla protein powder

  • 1/2 tablespoon cinnamon

  • 1 tablespoon cup honey

  • 1 teaspoon vanilla extract


YOGURT PARFAITS (makes 2 servings)

  • 1 cup plain greek yogurt

  • 2 tablespoons creamy peanut butter

  • 2 teaspoons honey

  • dash of coconut flakes per parfait

  • Place the oats in a food processor and pulse until they are finely ground. Place them in a mixing bowl and add in the flour, protein powder, cinnamon and peanut butter. Mix well to combine.

  • Add the honey and vanilla extract, mixing well. Being to bring the mixture together with your hands and roll it into 1-inch balls. Place them on a parchment sheet lined baking sheet. Freeze for about 30 minutes until they are set. They can be stored in a ziplock bag here until ready to use!

  • Whisk together the yogurt, peanut butter and honey until smooth. You can transfer the mixture to bowls or make these cute little parfaits like I did! Later the yogurt mixture with some of the crumbled cookie dough bites. Top with the toasted coconut and sea salt. Serve immediately.
