Instant Pot Chicken Alfredo

Who doesn't LOVE alfredo?? This recipe is clean, WW friendly and calorie friendly!

RECIPE:

2 large boneless skinless Chicken Breasts

Salt & Pepper

1 teaspoon Garlic Powder

2 tablespoons Butter

3 cloves Garlic- minced

2 cups Chicken Broth

1/2 teaspoon Basil

8 ounces (1 package) Fiber Gourmet Pasta (to order: https://www.netrition.com/cgi/goto.cgi?aid=4549

1 cup 2% Milk

1 cup low-fat Milk

1 cup Parmesan Cheese

1 tablespoon chopped Parsley


Set Instant Pot to sauté. Once warm, spray with non-stick cooking spray and add in chicken breasts. Season with salt, pepper and garlic powder. Brown chicken until golden brown, about 4 minutes per side. Remove and set aside.


Melt butter in the bottom on the IP and add garlic. Cook until fragrant. Pour in milk. Bring to a simmer and let thicken slightly, 2-3 minutes. Add chicken broth and basil, stirring to combine. Add noodles and add to IP. Add chicken.


Lock the lid and cook on high for 8 minutes. Naturally release the pressure. Remove chicken and shred or dice and return to the IP. Stir in parmesan and parsley and serve! Enjoy!
