RECIPE:
Nonstick Cooking Spray
16 oz package Potato Gnocchi
1 1/2 cups 0 point Marinara (I used the Skinnish Dish Marinara)
1 pound 93% Ground Beef
1/4 cup Onion- chopped
1 Egg- lightly beaten
2 tablespoons Breadcrumbs
1/2 teaspoon Dried Oregano
1/2 teaspoon Dried Basil
1/4 teaspoon Garlic Powder
1/4 teaspoon Fennel Seeds
8 ounces Mushrooms- sliced
1 medium Bell Pepper- cut into strips
2 teaspoons Oil
2 ounces Mozzarella Cheese
Preheat oven to 350 degrees. Spray a 2 quart baking dish with nonstick cooking spray, set aside.
Cook gnocchi per package directions. Drain and transfer to a large bowl. Stir in pasta sauce, set aside.
In a large bowl, combine ground beef, chopped onion, egg, breadcrumbs, seasonings and fennel seeds. Mix and shape into meatballs.
In a large skillet, add 1 teaspoon oil over medium heat. Sauté mushrooms & peppers and cook for 7 minutes or until tender. Add to bowl with gnocchi.
In the same skillet, add remaining teaspoon oil and cook meatballs until browned.
Add gnocchi mixture to baking dish, add meatballs to the top. Cover with foil and bake for 20 minutes. Remove foil. Top with cheese and bake uncovered for about 10 minutes or until cheese is melted and golden brown. Enjoy!
