Freezer Friendly Egg Sammies

A FANTASTIC breakfast loaded with good, whole food!

These breakfast sammies are super good and filling!! I popped mine in the air fryer for about 5 minutes and they came out perfect!!

RECIPE:

6 large Eggs

1 teaspoon Oil

1/2 Onion- chopped

2 cloves Garlic- chopped

2 Bell Peppers - chopped

1/2 pound Baby Spinach- chopped

Salt & Pepper to taste

6 English Muffins (I used the Ezekial)

6 slices of Cheese (I used the Sargento Ultra Thin)


Preheat oven to 350. Spray a baking dish (I used a 6x9) with nonstick cooking spray.


Heat oil in a large nonstick pan. Add onion and a pinch of salt and cook until translucent. Add peppers and garlic and cook another two minutes.


Add spinach with a bit more salt and pepper and cook until wilted. Shut off heat and allow veggies to cool a bit.


In a large bowl, whisk together the eggs and slowly stir in the cooled veggies and mix.


Pour the egg and veggie mix into your baking dish and bake for about 30 minutes or until eggs are set. Allow to cool and cut into 6 pieces. Assemble sandwiches. Wrap in foil if freezing or plastic wrap if eating within a few days. Freeze up to 3 months.


Egg mixture is 0sp (blue & purple) 2sp (green)- points vary based on English muffins & cheese you use.
