Caramel Apple French Toast Muffins

OMG!!! Soo good!!! French Toast in a muffin and amazing!!!

Pair with your favorite protein and fruit for a perfect breakfast!! Easy to take on the go!

RECIPE:

  • 12 slices of low-calorie bread (1-2sp per slice)

  • 6 eggs

  • ½ cup unsweetened almond milk *May substitute with regular milk*

  • ⅔ cup unsweetened apple sauce

  • 1.5 tablespoon brown sugar

  • 2 tsp cinnamon

  • 1 tsp vanilla

  • 2 cups diced apples, about 2 medium apples

  • 60ml (1/4 cup) caramel sauce- sugar free or fat free

  1. Preheat oven to 350F and spray a regular 12 hole muffin tin with some cooking spray.

  2. Cut up the 12 pieces of low-calorie bread, I used white bread but whole wheat or multigrain will work, I cut each piece into 16, 4 down & 4 across. Place bread pieces in a large bowl

  3. In a separate bowl whisk the eggs and add in the brown sugar, stir until it is dissolved, then add the milk, applesauce, vanilla and cinnamon and stir well.

  4. Peel and dice the apples, make sure they are cut into small pieces, add them to the bread and then pour the egg mixture on top, very gently stir the egg mixture into the bread/apple pieces.

  5. Divide the mixture into the 12 muffin cups.

  6. Bake in the oven for approximately 30 minutes, you want the tops to be a golden color.

  7. Let cool then gently remove from the muffin pan using a knife around the edges.

  8. Drizzle with the caramel sauce, I just placed it in a small ziplock bag and cut the tip off.

*Note- Caramel best put on when ready to serve, these muffins will freeze well with or without the caramel topping, since this is a french toast muffin they are dense due to the egg mixture.
