Butternut Squash & Sausage Frittata

Perfect for Breakfast, lunch or dinner! Easy meal prep too- great leftovers!

Packed with veggie, squash and lots of protein to keep you full & satisfied!! Fall dream!

RECIPE:

  • 12 slices center cut bacon

  • 1 cup Jimmy Dean turkey sausage crumbles

  • 1 red bell pepper, chopped

  • 3 scallions, sliced

  • ½ lb butternut squash, cut into small dice

  • 1 cup chopped fresh spinach leaves

  • sea salt and black pepper, to taste

  • 10 eggs, beaten

  • 4 slices cheese (I used thin sliced) chopped

  1. Preheat your oven to 370°F.

  2. In a large saute pan over medium heat add the bell pepper, scallion, and squash to the pan. Season with salt and pepper.

  3. Cook, stirring often, until the butternut squash is just tender, about 10 minutes.

  4. Add the spinach, and stir until it starts to wilt.

  5. Pour the contents of the pan into a large bowl.

  6. Let cool a few minutes.

  7. Stir in the eggs and cheese, bacon and sausage.

  8. Pour the mixture into a greased casserole dish (I used a 9-inch round glass dish).

  9. Bake until a knife inserted in the center comes out clean, about 55 minutes.

  10. Cut into 6 or 8 pieces.

  11. Enjoy!
