Buffalo Chicken Mac & Cheese

Creamy delicious and cheesy mac and cheese with seasoned chicken bites and tossed in buffalo sauce!!

So hearty, delicious, a little spicy and really good!! Comfort food to the max!

RECIPE:

1 pound boneless, skinless Chicken Breast

1/2 teaspoon Onion Powder

1/2 teaspoon Garlic Powder

1 teaspoon Dried Parsley

1/2 teaspoon Salt

1/4 teaspoon Pepper

1 tablespoon Oil

1 1/2 cups Chicken Broth

1 1/2 cup low-fat Milk

1 package Fiber Gourmet Pasta (to order- https://www.netrition.com/cgi/goto.cgi?aid=4549

1/4 cup Buffalo Sauce

1 cups light, shredded Cheese


Cut chicken into cubes. Place the chicken, onion powder, garlic powder, parsley, salt and pepper to a bowl and mix to coat.


Heat oil in a large stock pot or skillet over medium heat. Add chicken and cook until browned, about 5 minutes.


Reduce heat to low, add broth & milk. Allow to simmer until liquid starts to bubble.


When mixture starts to bubble, add the noodles. Once again let it simmer until noodles are tender, about 10-12 minutes.


When noodles are tender, stir in the buffalo sauce and 1 cup of the cheese. Stir until sauce is thick, creamy and cheesy. Divide into 6 servings and top with the remaining 1 cup of cheese.
